Highly aromatic, sweet gale catkins are harvested in late summer for their unique, fresh, camphorous, and resinous aroma, reminiscent of bay leaf and nutmeg.
CULINARY USE: For flavoring meats, sauces, vinaigrettes, and even desserts. Pairs well with fatty fish, lamb, beef, marinated pork, and grilled meats. Season at the end of preparation, as sweet gale becomes bitter when exposed to heat.
